Mango Salsa

1 Mango, diced (about 1 1/2 c.)

1/2 c. crushed pineapple

1/2 med. red onion, finely chopped

1/2 c. diced red bell pepper

1 jalapeno, minced (include ribs and seeds for hotter taste)

1 sm. cucumber, peeled and diced (about 1 c.)

3 tbsp. fresh cilantro leaves, chopped

3 tbsp. fresh lime juice

Salt and pepper to taste

Combine all ingredients in a bowl. Refrigerate for a minimum of 1 hour before serving.

For chicken with a 'kick', cook 2-3 chicken breasts. Then, place them in a casserole dish. Next, top each piece with mango salsa and shredded mozzarella cheese. Place in broiler for 4-5 minutes until cheese is lightly browned and serve with spanish rice and a salad.
